ASIAN TURKEY WONTONS WITH MANGO SALSA

YIELD: Makes 12 to 14 wonton cups

INGREDIENTS

wonton skins

1 lb. – lean ground turkey (93% lean)

For Marinade:

1/4 cup – low-sodium soy sauce

3 T – honey

1 T – sesame oil

2 cloves – garlic, minced

2 to 3 tsp. – sriracha

1/2 cup – green onions, chopped

For Salsa:

1 – ripe mangoes, diced

1/4 – red onion, diced

1/4 cup – cilantro, chopped

1/2 – jalapeno, seeded and diced

juice of 1/2 lime, (about 1 T)

1 tsp. – honey

salt and pepper , for seasoning

DIRECTIONS

Whisk together all ingredients for the marinade. Pour into a large bowl with meat and mix thoroughly. Keep in fridge for at least 30 minutes.

Meanwhile, mix all ingredients together for the salsa.

Gently press wonton skins into a mini muffin pan. Bake at 375°F for 10 minutes until golden, rotating pan halfway through.

Cook marinated meat, and season to taste.

Top wonton cups with meat and salsa.
