YIELD: Makes 6-8 servings
4 oz. block – Feta cheese, drained and patted dry
1 – orange, sliced and slices cut in half
1 cup – green Castelvetrano/Sicilian olives
1 cup – kalamata olives
1/4 cup – olive oil
1/4 cup – honey
4 sprigs – fresh thyme
freshly ground pepper
Preheat the oven to 350°F.
Place the feta into a small casserole dish along with the olives and oranges. Pour the olive oil and honey over all and add the thyme sprigs and pepper.
Bake the feta for about 30 minutes and then broil for about 3 minutes, watching carefully so as not to burn, until the feta is golden on top.
Serve warm alongside french bread and additional honey for drizzling.
Choose good quality whole milk feta for this recipe, it makes all the difference.
