YIELD: Makes 2 cups
INGREDIENTS
1 1/4 cups – mango, peeled and chopped
1/3 cup – red onion, chopped
1/3 cup – red bell pepper, chopped
1/3 cup – fresh lime juice
2 T – honey
1/4 cup – fresh cilantro, chopped
1 T – canned chipotle pepper in adobo sauce, minced
1 tsp. – Kosher salt
1/4 tsp. – coarsely ground black pepper
2 – garlic cloves, minced
DIRECTIONS
Stir together all ingredients in a medium bowl. Cover and chill until ready to serve.
